Each month, we bring you a new creation, and for the month of September, we are excited to present you with a dish that is a true ode to the flavors of autumn: Porchetta Salad with Porcini Santoreggia and Pecorino Romano. This recipe is a perfect balance of tastes and textures, combining the succulence of porchetta with the earthiness of fresh porcini mushrooms, all enhanced by the sharp flavor of Pecorino Romano.
INGREDIENTS FOR 4 PEOPLE:
- Porchetta: 400g
- Fresh porcini mushrooms: 300g
- Pecorino Romano cheese: 200g
- Summer savory: q.b.
- Extra virgin olive oil: q.b.
- Lemon juice: 20cl
- Pink pepper: q.b.
- Rosehip petals: q.b.
Procedure:
- Start by cleaning the porcini mushrooms carefully, using a knife to remove the soil from the stem and a damp cloth for the heads.
- Thinly slice the porcini and season them with salt, pink pepper, fresh savory and a touch of lemon juice to enhance the flavor.
- Take the porchetta while still hot, slice it finely and compose a salad on the plate that harmoniously unites the meat and mushrooms, enriching it with thin slices of Pecorino Romano cheese.
- Complete the dish with a drizzle of extra virgin olive oil and decorate with delicate rosehip petals for a touch of color and freshness.
