In collaboration with Chef Renato Bernardi, we created special recipes using our products. For the month of May we present: Sandwich with carasau bread and porchetta, enriched with red onion jam and romaine lettuce.

Ingredients for 4 people:

  • Carasau bread: 150 g
  • Porchetta: 300 g
  • Red onions: 3
  • Sugar: 60 g
  • Red wine: 200 cl
  • Extra virgin olive oil: q.b.
  • Salt and white pepper: q.b.
  • Romaine lettuce: 1
  • Fresh red pepper: q.b.
  • Rosemary: q.b.


  1. Jam preparation: Peel and thinly slice the onions, then stew them in oil. When they begin to wilt, add the sugar, a pinch of salt and pepper. Deglaze with red wine and continue cooking until the onions have completely disintegrated.
  2. Sandwich preparation: Wash the lettuce thoroughly, using only the inner leaves of the plant and drying them well. Arrange the carasau bread in the center of the plate, add the lettuce and porchetta on top. Top with the onion marmalade.
  3. Finishing and presentation: Decorate with fresh chili and rosemary, then serve.
